Recipe: Red Chilli Chicken Curry

Ingredients:

– 2 lbs boneless, skinless chicken breast or thighs
– 2 medium onions, diced
– 3 cloves garlic, minced
– 1 medium red chilli, diced
– 1 tsp ground cumin
– 1 tsp curry powder
– 1/2 tsp turmeric
– 1/2 tsp cayenne pepper
– 1 can coconut milk
– Salt and pepper, to taste
– Fresh cilantro, for garnish

Instructions:

1. Heat oil in a pan over medium heat. Add onions and cook until softened, about 5 minutes.
2. Add garlic and cook for 1 minute, until fragrant.
3. Add the diced red chilli and cook for another minute.
4. Add the cumin, curry powder, turmeric, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.
5. Add the chicken and cook until browned, about 5-7 minutes.
6. Pour in the coconut milk and bring the mixture to a simmer.
7. Reduce the heat to low and let the curry simmer for 15-20 minutes, until the chicken is cooked through and the sauce has thickened.
8. Season with salt and pepper to taste.
9. Garnish with fresh cilantro and serve over rice or with naan bread.
